Guilt-Free Brownie

Brownies are the perfect dessert: soft, sweet, slightly fudgy, and, most importantly, full of chocolate. However, they often come with a downside—guilt, due to their high sugar content. This recipe allows you to indulge without remorse, using wholesome ingredients that are high in calories but “good” calories, not empty ones. Plus, it’s vegan and gluten-free. The taste is just as good as a traditional brownie, the texture too, but the guilt is much lighter!
Ingredients

- 100 g of 73% dark chocolate with agave syrup (Chocolats Solé)
- 60 g rice flour
- 60 g coconut oil
- 100 g agave syrup
- 3 tablespoons flaxseeds
- 1 teaspoon cornstarch
- 50 g almonds
- 50 g walnuts
Instructions
- Soak the flaxseeds in 7 cl of water for at least an hour.
Dissolve the cornstarch in a small glass with two tablespoons of cold water. Add it to the flaxseeds and mix well. - Melt the chocolate in the microwave or using a double boiler. Add the coconut oil and agave syrup. Let it cool slightly.
Then, incorporate the flaxseed + cornstarch mixture and whisk. Gradually add the rice flour while whisking, then fold in the chopped nuts. - Pour the batter into individual molds or a square brownie mold. Bake at 180°C (356°F) for about 15 minutes for individual molds, or 25 minutes for a larger mold. The brownie is ready when a toothpick inserted in the center comes out clean.
