Cold Peach & Melon Soup with Mint, Croutons & Goat Cheese

If you love mixing sweet and savory flavors in one dish, this recipe will delight you. Besides being incredibly healthy, it’s perfect for cooling down on hot days. This chilled soup combines melon, peach, yogurt, lime juice, and mint. It’s served with crispy golden croutons and pieces of goat cheese. The crunch of the bread, the creaminess of the goat cheese, the sweetness of the peach, and the tangy touch of lime create a true explosion of flavors.
Ingredients (serves 4 to 6 bowls)
- 350 g peach
- 250 g melon
- 1 plain yogurt
- 5-6 mint leaves
- 1 lime
- 2-3 tbsp olive oil
- 4 slices whole-grain bread
- 4 slices of goat cheese (log) or fresh goat cheese
- Sprouted seeds (alfalfa or other)

Instructions
- Chill the fruit: Place the fruit in the refrigerator beforehand to ensure it’s well chilled.
- Blend the soup: In a blender, blend the peaches (with skin), melon, yogurt, mint, lime juice, and olive oil until smooth. I highly recommend this good quality blender.
- Prepare the croutons: Cut the bread into small cubes and toast them in a pan with a drizzle of olive oil until golden.
- Crumble the cheese: Cut or crumble the goat cheese.
- Serve: Pour the chilled soup into bowls, top with croutons and goat cheese, and garnish with sprouted seeds.


Veggie+ Tip
For a vegan version, replace goat cheese with smoked tofu and omit the yogurt from the soup. For a gulten free version, just replace the bread with a corn or rice bread.
Storage Tip
Lime juice helps slow down the oxidation of the mint and fruit, but it’s best to consume the soup within 6 to 8 hours. Keep it well covered in the fridge to prevent contact with air, or even better in air tight containers. After this time, the flavor may not be as fresh, and the soup may darken.
