Rice Salad with Sesame-Crusted Tofu

A very simple salad can become elegant when presented creatively. Using a pastry ring, we give it a more defined round shape that looks great on the table. The tofu adds substance and will satisfy even the heartiest appetites!
Ingredients (for two salads)
- 100 grams of firm tofu
- 100 grams of basmati rice
- 1 tomato
- 1 small celery stalk
- 4 sprigs of parsley
- 6-7 mint leaves
- 3 leek leaves
- 1 garlic clove
- 1 teaspoon of curry powder
- 1 teaspoon of ground cumin
- 1 teaspoon of Sichuan peppercorns (optional)
- 2 tablespoons of sesame seeds
- 2 tablespoons of soy sauce
- Salt and pepper to taste
- Olive oil
- Oil and balsamic vinegar for the vinaigrette
Instructions
- Cook the Rice: Prepare the basmati rice pilaf and let it cool (ideally, use rice from the previous day to prevent clumping).
- Prepare the Leeks: Place two leek leaves (both white and green parts) in boiling water for 5 minutes until soft. Remove and plunge into cold water. Let them drain in a colander.
- Mix the Salad: Dice the tomato, celery, and one leek leaf into small pieces. Combine with the rice, adding chopped parsley and mint. Season with salt, pepper, balsamic vinegar, and olive oil. Mix well and set aside.
- Cook the Tofu: Cut the tofu into cubes and add to a hot skillet with olive oil. Allow it to brown slightly, then add the spices and finely chopped garlic. Let everything brown a bit more, then add the soy sauce and sesame seeds. Cook on high until the seeds are nicely toasted, then set aside.
- Assemble the Salad: Lightly grease a metal ring with olive oil. Line the inside with a leek leaf, pressing it against the sides. Spoon the rice salad into the ring, pressing gently to compact it. Top the salad with the tofu cubes. Carefully remove the ring and garnish the plate with some lettuce or, as shown in the photo, with sprigs of romanesco and a drizzle of balsamic cream.
