Shakshuka

Shakshuka is a Middle Eastern dish traditionally made with slow-simmered tomatoes and eggs. It is usually served with pita bread. In this version, we add bell peppers and enjoy it with sourdough bread for a more Western touch. It’s a very easy dish to prepare and absolutely delicious.

Ingredients (for two generous servings)

  • 2 onions
  • 2 red bell peppers
  • 2 cans of whole tomatoes (800 g) or 800 g of fresh peeled tomatoes
  • 2 garlic cloves
  • 2 dates
  • Salt, pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon ground chili
  • Cilantro
  • Mint (optional)
  • 4 eggs
  • Extra virgin olive oil of excellent quality

Instructions

  • Cut the onions and bell peppers into medium-sized pieces. Sauté them in a pan with a generous amount of olive oil until golden brown. Then add the spices, whole peeled garlic cloves, diced tomatoes, and chopped dates. Lower the heat, cover, and let it simmer on low heat for at least an hour.
  • Once the vegetables are well cooked and the tomato sauce has thickened, make four small wells in the pan and crack the eggs into them. Cover and let them cook until the egg whites turn opaque (the yolks should remain slightly runny).
  • Garnish with a few sprigs of cilantro and mint leaves, then serve immediately with toasted bread.
