Curry Rice with Nuts

A simple, extremely healthy, and complete recipe: it includes vegetables, rice, nuts, and if you like, you can add tofu. It can serve as a standalone dish, complemented by the traditional Indian raita sauce.∆∆∆
Ingredients
- 200 g basmati rice
- 1/2 leek
- 2 carrots
- 1 stalk of celery
- 2 cloves of garlic
- 1 tablespoon tomato puree
- 150 ml coconut milk
- 2 tablespoons grated coconut
- A handful of raw peanuts or cashews
- 1 tablespoon raisins
- 2 teaspoons curry powder
- 2 teaspoons turmeric
- 1 teaspoon cumin seeds
- 2 cardamom pods
- 2 cloves
- 1 bay leaf
- 3-4 sprigs of cilantro
- Salt
Instructions
- Chop the Vegetables: Finely chop all the vegetables. Sauté them in olive oil until softened.
- Add Aromatics and Spices: Add the whole garlic cloves, spices, raisins, and tomato puree. Sauté quickly.
- Cook the Rice: Add the rice, allowing it to absorb a bit of the oil for a shiny finish. Incorporate 400 ml of boiling water, coconut milk, grated coconut, and the bay leaf. Cook, stirring occasionally to ensure the vegetables mix well.
- Finish the Dish: Once the rice is cooked, stir in lightly crushed peanuts (or cashews) and some chopped cilantro. Mix well, serve in bowls, and garnish with additional cilantro.
